Prime Rib with Horseradish Butter

Ingredients

For the Prime Rib:

1 (5-6 lbs) bone-in prime rib roast
2 tbsp olive oil
3 garlic cloves, minced
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 tbsp coarse salt
1 tsp black pepper

For the Horseradish Butter:

½ cup unsalted butter, softened
2 tbsp prepared horseradish
1 tsp Dijon mustard
Salt and pepper to taste

For Sides:

Creamy mashed potatoes
Roasted vegetables (potatoes, Brussels sprouts, and carrots)

Instructions

Prepare the Prime Rib: Preheat your oven to 450°F (230°C). Rub the prime rib with olive oil, garlic, rosemary, thyme, salt, and pepper. Place on a roasting rack in a pan.

Roast the Prime Rib: Roast at 450°F for 20 minutes, then reduce the temperature to 325°F (160°C). Continue roasting until the internal temperature reaches 120°F (49°C) for medium-rare (about 2-2.5 hours). Rest for 20 minutes before slicing.

Make the Horseradish Butter: Combine butter, horseradish, Dijon mustard, salt, and pepper. Mix until smooth and set aside.

Prepare the Sides: Mash boiled potatoes with butter, cream, salt, and pepper. Roast vegetables in olive oil, salt, and pepper at 400°F (200°C) for 30-35 minutes.

Serve: Slice the prime rib and serve with a dollop of horseradish butter, mashed potatoes, and roasted vegetables.
