Pineapple bread is a delightful and tropical treat! Here’s a simple recipe to make moist and flavorful pineapple bread:

Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 2 large eggs
  • 1/2 cup (120ml) vegetable oil (or melted butter)
  • 1 teaspoon vanilla extract
  • 1 can (20 oz) crushed pineapple in juice (do not drain)
  • 1/2 cup (50g) chopped walnuts or pecans (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking soda, baking powder, salt, and cinnamon (if using).
  3. Combine Wet Ingredients: In a medium bowl, beat the eggs. Add the oil, vanilla extract, and the entire can of crushed pineapple with its juice. Mix well.
  4. Combine Wet and Dry Ingredients: Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix. If you’re adding nuts, fold them in now.
  5. Pour into Pan: Transfer the batter into the prepared loaf pan, spreading it evenly.
  6. Bake: Bake in the preheated oven for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool: Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  8. Serve: Slice and enjoy as is, or with a spread of butter or cream cheese.
