Pineapple bread is a delightful and tropical treat! Here’s a simple recipe to make moist and flavorful pineapple bread:
Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
- 2 large eggs
- 1/2 cup (120ml) vegetable oil (or melted butter)
- 1 teaspoon vanilla extract
- 1 can (20 oz) crushed pineapple in juice (do not drain)
- 1/2 cup (50g) chopped walnuts or pecans (optional)
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking soda, baking powder, salt, and cinnamon (if using).
- Combine Wet Ingredients: In a medium bowl, beat the eggs. Add the oil, vanilla extract, and the entire can of crushed pineapple with its juice. Mix well.
- Combine Wet and Dry Ingredients: Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix. If you’re adding nuts, fold them in now.
- Pour into Pan: Transfer the batter into the prepared loaf pan, spreading it evenly.
- Bake: Bake in the preheated oven for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- Serve: Slice and enjoy as is, or with a spread of butter or cream cheese.
