Ingredients:
1 lb chicken feet, cleaned and nails trimmed
1 tbsp cooking oil
3 cloves garlic, minced
1-inch piece of ginger, minced
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp Shaoxing wine
1 tbsp honey or maltose
1 cup water
2-3 red chilies
Green onions for garnish
Instructions:
1. Blanch the chicken feet:
Boil a pot of water and add the chicken feet. Boil for 5-7 minutes, then drain and rinse with cold water.
2. Deep fry (optional):
Heat oil in a wok or deep fryer to 350°F. Fry the blanched chicken feet for 2-3 minutes until golden brown. Drain and set aside.
3. Sauté aromatics:
In a wok or pan, heat oil over medium heat. Add garlic and ginger, and sauté until fragrant.
4. Add sauce:
Add soy sauce, oyster sauce, Shaoxing wine, honey, and water to the pan. Stir to combine.
5. Simmer:
Add the chicken feet and chilies to the pan. Bring to a simmer, cover, and cook for 30-40 minutes until the chicken feet are tender and the sauce has thickened.
6. Serve:
Garnish with green onions and serve hot.
