Instructions
Prepare the Soup:
Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and garlic, and cook for 5-7 minutes until the vegetables are softened and fragrant.
Add ginger and spices: Stir in the grated ginger, cumin, turmeric, and cinnamon (if using). Cook for another 1-2 minutes until the spices become fragrant.
Add lentils and liquids: Stir in the rinsed lentils, coconut milk, and vegetable broth (or water). Bring to a boil, then reduce the heat to low and let the soup simmer, covered, for about 25-30 minutes, or until the lentils are tender. Stir occasionally.
