Ingredients
For the Pasta:
12 oz (340 g) pasta (spaghetti, penne, fusilli, or your choice)
Salt, for pasta water
For the Sauce:
2 tablespoons olive oil
2 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional, for a bit of heat)
4 cups fresh spinach, roughly chopped
1 cup frozen peas (or fresh, if preferred)
1/2 cup vegetable broth or water
1/4 cup grated Parmesan cheese (optional, for serving)
Salt and pepper, to taste
For Garnish:
Fresh basil or parsley, chopped (optional)
Extra Parmesan cheese, for serving (optional)
Instructions
Cook the Pasta:
Bring a large pot of salted water to a boil.
Cook the pasta according to the package instructions until al dente, usually about 8-10 minutes.
Reserve 1/2 cup of pasta water before draining the pasta.
Drain the pasta and set aside.
Make the Sauce:
In a large skillet, heat the olive oil over medium heat.
Add the minced garlic and red pepper flakes (if using) and sauté for 1-2 minutes until fragrant.
Add the chopped spinach and sauté for 2-3 minutes, until wilted.
Stir in the peas and cook for another 2 minutes until heated through.
Add the vegetable broth or water to the skillet and bring to a simmer. Let it cook for another 2-3 minutes to combine the flavors and create a light sauce.
Taste and season with salt and pepper as needed.
Combine Pasta and Sauce:
Add the cooked pasta to the skillet with the spinach and peas, tossing to coat the pasta in the sauce.
If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.
Stir in the grated Parmesan cheese, if using, to add a creamy, cheesy flavor.
Serve:
Divide the pasta between serving plates.
Garnish with fresh basil or parsley and extra Parmesan cheese, if desired.
Serve immediately with a side of crusty bread or a light salad.
